Blue Cheese Cow's Milk Pasteurized Roelli Cheese Haus USA Cellar cured English-style cheddar with a subtle hint of blue flavor. Edible rind created during open air curing. Food Pairing: crusty artisan breads, sweet and tangy chutneys, marinated mushrooms, candied walnuts, bacon-wrapped dates, thinly sliced pears, dried cranberries Beverage Pairing: brown ale, porter, stout, amber ale, or wines like Cabernet Sauvignon, Pinot Noir, barrel-strength bourbon, or Port.

Roelli Cheese Haus, located in Shullsburg, Wisconsin, is renowned for its artisanal cheeses crafted by fourth-generation cheesemaker Chris Roelli. In the early 1920s when Chris Roelli's great-grandfather, Adolph Roelli, emigrated from Switzerland. After starting a cheese factory, the family continued the tradition through generations. In 1991, the operation shut down due to the challenges of the commodity cheese market, but Chris reopened the factory in 2006 as a small artisan business, who is celebrated for award-winning original recipes like Dunbarton Blue and Red Rock.
