Bayley Hazen Blue is an American-made, award winning blue cheese produced by Jasper Hill Farm in Vermont, using raw cow's milk and aged to develop a dense, fudgy texture and complex flavor profile. It's known for its balanced taste, featuring nutty, buttery, and sweet notes, with hints of chocolate, roasted hazelnuts, and a subtle licorice or anise-like finish. The cheese's name honors the Bayley Hazen military road, and it is considered a classic in American artisanal cheese-making, often paired with sweet wines, dark beers, or dark chocolate.
