The resulting cheeses are then dry-salted and left to age for a couple of weeks. Primosale Fantasia has olives, arugula and peppers folded into the curds for an added kick of flavor and color. It’s the perfect table cheese to snack on.
Biopek was founded by Giuseppe (Pippo) Messina. A genuine story that has its roots in a small artisan workshop in Gibellina, a small town in the Belice Valley in the province of Trapani, where pecorino cheeses purchased from local producers were aged and packaged.
