Casa Forcello Plum Mostarda is a traditional Italian condiment made by Le Tamerici, the company founded by Paola Calciolari in the Mantua region. It combines hand-cut pieces of candied plums with a potent, spicy mustard essence. The mostarda is made from ripe Italian plums, which are rich, aromatic, and have a naturally sweet flavor. The fruit is cooked slowly and candied in its own juices to preserve the flavor and texture. A concentrated mustard extract is added to the plums, giving the mostarda a signature piquant finish. The result is a hot-and-sweet combination that balances the richness of the fruit.
Paola Calciolari began her career as a pharmacist but her true passion was food. She took a gamble, leaving her secure job in order to produce typical condiments from Mantova, often employing her grandmother's recipes. And we're glad she did. She makes her exceptional mostardas by sourcing locally harvested fruit, slicing and candying them in their juices, and then adding drops of a very concentrated, spicy mustard extract; it is a highly labor intensive process. Unlike many whole mustard fruits on the market, these are extraordinarily fresh, flavorful and chunky.
