For their first uncured salami, they wanted to make sure they put an exciting twist into it by making the flavors of salt, pork, garlic and pepper very forward. To accomplish this they used pinot noir wine. Other key ingredients include garlic and black pepper.
In 2007, Zoe's vision was to build an artisan cured meat company leveraging their ability to connect and communicate with chefs and restaurateurs. They wanted to give chefs access to ingredients that were so good they didn't have to make them in-house from scratch.
