Cotija is a dry grating cheese similar to Parmesan. It is an aged cheese, packed with flavor and zest that gets better with time. It is named after the town of Cotija in the Mexican state of Michoacán. When the cheese is made, it is white, fresh and salty thus bearing immense resemblance to feta cheese however, with aging, it becomes hard and crumbly like Parmigiano-Reggiano. It is usually saltier than the typical Mexican cheese, strongly flavored, firm and it does not melt.

Nuestro Questro Talavera Cotija is an aged Mexican cheese that draws its name from the town of Cotija, Michoacán, in western Mexico, where the cheese has deep historical roots.
Cotija cheese has been produced in the region for centuries, influenced by Spanish colonial cheesemaking traditions introduced during the colonial period. It was originally developed as a long-lasting, salted cheese that could survive transport without refrigeration, essential for rural communities. The highland climate and rich grazing lands of Michoacán provided ideal conditions for dairy farming, and the cheese’s firm, crumbly texture and strong flavor made it well-suited for preservation and transport.
Over time, Cotija evolved from a local specialty into a signature Mexican cheese, often compared to Parmesan for its aged, salty profile. Its popularity grew through Mexican migration to the United States and cross-border trade, leading to its presence in U.S. markets and fusion cuisines.
Today, Nuestro Questro Talavera Cotija is an artisanal, aged cow’s milk cheese made in the U.S. but inspired by traditional Mexican methods. It is dry, firm, and crumbly, with a salty, zesty flavor that develops over time. It is typically sold in wedges or grated form and is used as a finishing cheese in tacos, pico de gallo, elotes, salads, and more.
