Calabro Stracciatella is an artisanal, fresh cheese that embodies the luxuriously creamy interior of a burrata. Crafted with fresh ingredients, this cheese is meticulously hand-made to showcase its distinctive, stringy texture. The name "stracciatella" comes from the Italian verb stracciare, meaning "to tear," which evocatively describes the hand-pulled mozzarella strands that create its signature appearance and mouthfeel.
Calabro's story begins in the mountains of Sicily, where the Calabro family turned fresh milk into their signature cheeses. In 1948, they left Sicily to start new lives in America. By 1953, the family had founded the Calabro brand, delivering cheese, sausage, and ice cream to Italian grocers and families in Connecticut. Today, Calabro has grown their operations, distributing their cheeses to 27 states in the US.
