The Screamer from Ueli Moser is a classic triple cream cow’s milk cheese with at least 75% fat, one of the very few of this style made in Switzerland. It stands out for its less fluffy and more compact texture, as well as its cheesy flavor instead of overpowering salt and cream that is so commonly found in this style of cheese.
Moser Cheese is produced at the BonCas dairy in Dotzigen, Switzerland, and is founded by Ueli Moser, who comes from a family of cheesemakers. His father was involved in making traditional Swiss hard and semi-hard cheeses, but Ueli's passion lies in producing soft cheeses. After completing his cheesemaking apprenticeship and spending time in France, where he developed a love for soft ripened cheeses, he established his dairy in 1999 focused on soft cheese innovation.
