Quinta is a soft-ripened, bloomy rind cheese, inspired by the very famous, seasonally made cheeses from the Jura mountain region along the French-Swiss border. The interior texture is silky-smooth, and the rind is fluffy, yet slightly firm. Each wheel is wrapped in Spruce bark that has been infused with the essence of CA Bay Laurel. The younger wheels have a custardy texture with a slight buttermilk freshness and a vanilla cream finish. The more mature wheels are softer (and spoonable!) in texture. The richer flavor is filled with fresh creamery butter in the beginning and expands to notes of woodsy-mustard and wild mushroom with a CA Bay Laurel herbaceousness in the finish.

Point Reyes Farmstead Cheese Company, located in Point Reyes Station, California, has a rich history rooted in family and innovation. Founded in 2000 by the Giacomini sisters—Jill, Lynn, and Diana—this artisan cheese company evolved from a traditional dairy farm established by their parents, Bob and Dean Giacomini, back in 1959. Notably, Point Reyes Farmstead Cheese Company operates as a 100% women-owned business, recognized by the Women's Business Enterprise National Council (WBENC).
