Roelli Cheese Haus, located in Shullsburg, Wisconsin, is renowned for its artisanal cheeses crafted by fourth-generation cheesemaker Chris Roelli. In the early 1920s when Chris Roelli's great-grandfather, Adolph Roelli, emigrated from Switzerland. After starting a cheese factory, the family continued the tradition through generations. In 1991, the operation shut down due to the challenges of the commodity cheese market, but Chris reopened the factory in 2006 as a small artisan business, who is celebrated for award-winning original recipes like Dunbarton Blue and Red Rock.
