Smoked Cheddar is naturally smoked by using a blend of apple, cherry, and hickory wood chips. To create this savory cheese, they place their Farmhouse Cheddar into their on-site smokehouse and let the smoke penetrate deeply into the cheese. This process adds a distinct caramel color and supple leathery texture to their hearty cheddar.
Fiscalini Farmstead started as a dairy farm over 100 years ago. Today the fourth generation owns and operates the business, and continues a way of life that respects, preserves and honors the animals, the land, and resources. Their farm was established in 1914 by their great-grandfather who immigrated from Switzerland and settled in Modesto, California. The dairy Farmstead has expanded to include a cheesemaking facility on the premises. They are committed to making the best-tasting, handcrafted cheeses in the world.
