Canal Junction Black Swamp is modeled after the classical gouda. This cheese has a natural rind and its flavor evolves based on its age and the season in which it's made. It can range from creamy and mild to harder and sharper. The name "Black Swamp" is inspired by the historic Great Black Swamp that once covered much of northwest Ohio, including the area where the farm is located.
Canal Junction Farm is located along the junction of the historic Miami Erie and Wabash Erie Canals Ohio. Since opening in 1999, this family’s 5th generation of farmers focus on operating in harmony with the environment to raise regenerative and grass-fed agricultural practices. These practices heal the land while producing nutrient-dense raw milk products.
