Asiago is a DOP thermalized cow’s milk cheese produced in the provinces of Vicenza, Trento, Padova and Treviso. Of the three ages of Asiago available, Stravecchio is the oldest, meaning “extra aged.” After 12 months of aging, the cheese develops complex aromas of bread and almonds and an intensely nutty, approachable flavor with minimal sharpness.
